Memory card speed

I am planning to purchase a new memory card for my Canon XTi. My question is how fast of a card is actually usable by the camera? I'm not interested in transfer speed to the computer since I just start it and walk away, but I would like to have the fastest card that utilizes the speed for burst photography. Also are there any difference in the top brands?
