Unhappy Flash sync on 20D: HELP!!!

Hello
I have to learn how to correctly use my new Canon 20d with a Canon 550 ex flash used as a master and an external Metz equipped with a light trigger: I learned that I need to press the "*" button on the 20D (FE lock) to let the the flashes sync properly: with the press of the button the 550ex flashes and makes a measurement, and the next photo taken will have the two flashes in sync.

the bad thing is that seems that the subsequent phots "forget" that setting, so I have to to go thru the "*" sequence every time, and this would be a problem in a situation like a wedding. what should I do to let the two flashes sync without having to make an FE lock every time?

many thanks for anyone who will gift me some time to answer this one, and excuse me if I maybe I wrote all this in a too complex way but english is not my home language ! :-)
