Well really about any camera will do the job here. You not asking for a lot, but you will need to setup for it.
I often use my camera to photograph pages when I dont have my scanner hooked up. I usually lay the page or book down on a well lighted table, with 1 or 2 60-watt bulbs above it. This lights the area nicely.
If you want you can do it free handed, or you can setup a tripod to take the photos. Its really more of a personal choice.
Watch out for glossy paper though, some times the light will reflect back off of it. Also if you use flash this will occur, but thats why I opt for the 60-watt bulbs.
The biggest thing is watch copyright laws, I am not sure about copying from a book like that. I would say personal use would be OK, but I am not sure about posting them.
But to get back to your question, about any camera will fit your needs.
